Sugar-Free Tapioca Dessert

INGREDIENTS
  • 1 (3 oz.) box Jell-O vanilla-flavored* pudding and pie filling (sugar-free), not instant
  • 1 tablespoon quick tapioca
  • 2 1/4 cups Cass-Clay fat free skim milk
  • Sliced bananas (2 to 3) or other fruit
  • 1/2 teaspoon vanilla extract (optional)
INSTRUCTIONS
  1. Combine pudding, tapioca, milk and vanilla in quart-size or larger microwave-proof container. Microwave on High power for 3 minutes. Stir.
  2. Microwave for 2 more minutes. Stir again; microwave for 12 minute or until mixture boils.
  3. Remove from oven. Stir, then set aside to partially cool.
  4. While pudding is still warm, spoon over fruit in serving dishes.

Makes 4 to 6 servings.

(Test note: This pudding was very easy to prepare and very tasty. We used vanilla-flavored pudding in testing, but you could use another flavor instead.)
