For Each Serving

  1. 2 slices whole grain or seeded bread
  2. ½ cup Cass-Clay 4% Cottage Cheese


Avocado Cottage Cheese Toast

1 clove garlic, peeled, halved

1/2 avocado, sliced

Lemon juice

Fresh ground pepper

Crushed red pepper flakes

Fresh ground sea salt


Egg & Tomato Cottage Cheese Toast

4 cocktail or 1 to 2 Roma tomatoes, sliced

2 hard-boiled eggs, peeled, coarsely chopped

Everything but the bagel seasoning or seasoned pepper


Smoked Salmon Cottage Cheese Toast

2 ounces sliced smoked salmon

Thinly sliced red onion

Capers or chopped green olives, drained

Fresh ground pepper

Fresh ground sea salt

Fresh dill sprigs


How to:

  1. Toast bread until browned and crisp.
  2. To make Avocado Cottage Cheese Toast, lightly rub 1 side of each slice with the cut side of the garlic clove half; discard garlic clove. Spread cottage cheese on toast.  Place slices of avocado on cottage cheese; drizzle with lemon juice.  Sprinkle with pepper, red pepper flakes and salt.  Serve immediately.
  3. To make Egg & Tomato Cottage Cheese Toast, spread cottage cheese on toast. Place tomato slices on cottage cheese; top with chopped egg.  Sprinkle with seasoning.  Serve immediately.
  4. To make Smoked Salmon Cottage Cheese Toast, spread cottage cheese on toast. Place sliced salmon on cottage cheese.  Top with red onion and capers.  Sprinkle with pepper and salt.  Top with dill sprigs.  Serve immediately.
