Dill Cucumber Bites

Ingredients:

  • 1 large English cucumber
  • 1/2 cup Cass Clay® cottage cheese
  • 1/4 cup feta cheese crumbles
  • 2 tablespoons fresh dill, plus extra for garnish
  • juice of 1 lemon
  • 1 tablespoon olive oil
  • 1/4 cup cherry tomatoes, each cut into quarters
  • Pinch of kosher salt

How To:

  1. Slice cucumber in 1/4-1/2” rounds
  2. In a mini food processor or blender, blend cottage cheese, feta, 2 tablespoons dill, lemon juice, olive oil, and a pinch of salt until smooth
  3. Arrange cucumber slices onto a serving plate
  4. Use a small spoon to scoop about 2 teaspoons of the cottage cheese mixture onto each cucumber round
  5. Top each with a quarter cherry tomato and a small sprig of dill to serve
  6. Enjoy!
