
Mini Protein Pizzas

Ingredients:
- 2 cups Cass Clay® cottage cheese, blended
- 2 cups flour, plus more for pressing out dough
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 2 tablespoon olive oil
- Pizza toppings (see note)
Note: This pizza dough can be used to make countless types of pizza, but here are some topping combinations we love:
- Red sauce, shredded mozzarella, pepperoni, and chopped giardiniera
- Red sauce, sliced heirloom tomatoes, fresh mozzarella, sliced red onion, and fresh basil leaves
- White sauce, shredded white cheddar, sautéed mushrooms, garlic, caramelized onions, and sage
How To:
- Preheat oven to 450 degrees
- Dust 3 small pizza screens with flour or line 3 small baking sheets with parchment paper
- Arrange oven racks so there is enough room for the three trays (or just bake pizzas in batches if that works better with your equipment)
- In a large bowl, mix blended cottage cheese, flour, baking powder, and salt, and mix to form a shaggy dough
- Use your hands to work the dough to bring it together, dusting with a bit of extra flour if necessary
- Form dough into 3 equal balls
- On each prepared pizza screen or tray, press a ball of dough into a thin circle, 8-9 inches in diameter
- Dust with a bit of extra flour as you work if the dough is sticky
- Use a fork to poke holes all over the crust, avoiding the outside edges, to prevent air bubbles from forming
- Brush each crust with a thin layer of olive oil and bake for 7-8 minutes, until crust is set in the middle, but little color has developed
- Remove from oven and add toppings as desired to each pizza
- Bake again for 5-6 minutes until cheese is melted and crust is browned
