Homemade Cream of Tomato Soup

Cook Time: 20 min.
Serves: 4

Ingredients:

  • 2 tablespoons olive oil
  • ½ white onion, chopped
  • ½ tablespoons minced garlic
  • 1 (28-32 oz.) can of crushed tomatoes
  • ¼ teaspoon baking soda
  • 1 tablespoon dried parsley
  • salt and pepper to taste
  • 1 tablespoon fresh basil, roughly chopped
  • 1 tablespoon honey
  • 2-3 cups of Cass-Clay® Milk
  • fresh thyme (optional)

How To:

  1. Sauté the onion and garlic in the olive oil until tender.
  2. Add the tomatoes, baking soda, parsley, salt, and pepper.
  3. Bring to a boil, then simmer for 10 minutes over medium-low heat.
  4. Add the honey and basil. Add salt and pepper as needed.
  5. Add in 2-3 cups of Cass-Clay milk (depending on desired consistency).
  6. Let the soup simmer until hot.
  7. Add fresh thyme. (Optional)
